"Eddie's" Broccoli Casserol

(for a 9x13 dish) – double for large casserole

  1. Cook 1 package of Uncle Ben’s white & wild (or brown & wild) rice – according to package instructions
  2. Saute ¼ cup butter, 1 – 1 ½ cups sliced fresh mushrooms
  3. Parcook 1 cup celery, 4 cups broccoli (bite-sized), 1 clove of minced garlic, ½ onion (optional) – briefly (approximately 3 minutes) so that it is still crunchy
  4. Melt (slightly) 1 tin cream of mushroom soup, 1 cup cheez whiz
  5. Mix all together with 1 can water chestnuts
  6. Top with ½ cup slivered almonds (roasted) and ½ cup grated cheddar (option: ½ cup buttered bread cubes)
  7. Bake for 1 hour at 350℉
