New Year Recipe

New York Cheesecake

Crust:              ⅓ cup butter (75mL)
                        1⅓ c. baking crumbs (325mL)    
                        ¼ c. granulated sugar (50mL)

1.  Stir crumbs and sugar together.
2.    Melt butter.
3.    Stir butter into crumb and sugar mixture.
4.    Press into bottom of pie plate.


Filling:           1250g of cream cheese, softened
                       1¾ cup granulated sugar (425mL)
                       3 tbsp flour (45mL)
                       2 tsp grated lemon rind (10mL)
                       ½ tsp vanilla (2mL)
                       5 eggs
                       ¼ cup whipping cream
                       Fruit sauce or pie filling

1.    Preheat oven to 425˚F.
2.    Beat cheese in large bowl with electric mixer until smooth.
3.    Beat in sugar, flour, lemon rind and vanilla at high speed.
4.    Add eggs, one at a time, and the cream, beating until smooth and light.
5.    Pour into prepared crust.
6.    Place on baking sheet or piece of aluminum foil.
7.    Bake for 12 minutes, then reduce heat to 300˚F for one hour or until softly set.
8.    Cool completely on wire rack and then chill 3 hours or overnight.
9.    Serve at room temperature with fruit.
