Layered Lemon Delight

First layer:               1 c. flour (250mL)
                              1 c. pecans, chopped (250mL)
                              ½ c. butter, softened (125 mL)                     

  1. Preheat oven to 325˚F
  2. Mix ingredients together and press into a 9x13 pan.
  3. Bake for 25-30 min or until browned. Cool.

 

Second layer:            1 pkg. 8 oz (250 g) cream cheese
                              1 c. icing sugar (250mL)
                              1 c. whipping cream (250mL)

  1. Cream cheese and icing sugar using an electric mixer.
  2. In a separate bowl, whip whipping cream until soft peaks form.
  3. Fold whipping cream into cream cheese mixture.
  4. Spread evenly over cooled crust.

 

Third layer:               2 cans of lemon pie filling

Fourth layer:             2 cups whipping cream (500mL)
                              3 tbsp icing sugar (45 mL)
                              1 tsp vanilla

  1. Beat whipping cream, icing sugar and vanilla until stiff.
  2. Spread over lemon layer.
  3. Garnish with chopped pecans.
